Orange Jack-o'-Lanterns

Ingredients

  • 4 navel oranges
  • 2 pints mango, passion-fruit, or orange sorbet, softened

Directions

  1. Slice off the top quarter of each orange, and reserve for lid. Using a grapefruit spoon or paring knife, scoop or cut out interior of oranges. Reserve flesh for another use, such as fresh orange juice.
  2. Draw a jack-o'-lantern face freehand. Tape paper to hollowed orange, and cut out features with a craft knife or other small, sharp knife.
  3. Pack each orange with sorbet, and top it with a "lid." Bend floral wire, and poke it in -- not through -- top of orange for tendrils. Transfer to a parchment-lined baking sheet, and place in the freezer until firm, about 30 minutes. Oranges with sorbet can be frozen for up to 3 days

Exploring The Food Guide Pyramid

For our next assignment: Visit http://www.mypyramid.gov/mypyramid/index.aspx where you can find out what the recommended daily intake of food for your body is depending on your age, gender, height, weight, and physical activity level. Print off the individualized plan it produces for you because you will need the individualized report to plan the meals you will eat for one day that meet the recommended dietary intake for yourself. What you print off should tell you how much of the certain food groups you should consume in one day. You will be planning breakfast, lunch, dinner and two snacks that will fit within the recommended daily intake. I would like for you to bring to class a rough draft of the food for one day you are planning to use to for the "recommended dietary intake project". Also take time to explore the website to find out interesting facts and information. I would like for you to come to class with the following questions answered. 1. What is the difference between oils and solid fats? What kind of fats do most oils contain? 2. What foods that are dairy products DO NOT actually count as part of the milk food group? 3. What are three of the websites recommended ways to increase physical activity?
